Cornerstone First Edition Pizza and Subs: A Great Pizza Spot in New Mexico

I’m hungry just looking at it.

 

If you’re reading this, you might be living in New Mexico. You might like pizza, too. You may even have a local favorite that you swear is the best, but if you haven’t experienced the charm of Tucucmcari and eaten a Cornerstone First Edition Pizza, you haven’t had the best pizza in New Mexico.

New Mexico, I need to tell you all something important and, perhaps life changing if you’re ready for it.

If you’ve been reading our stories about New Mexico, you might recall that not long after moving to the Land of Enchantment, I suffered a breakdown outside of Tucumcari, New Mexico.

While I waited for help at Cornerstone First Edition Pizza and Subs , I sat down and met owner Todd DuPlantis, who filled me in on some of the great things happening in Tucumcari.

I promised him I’d be back, and my taste buds and I are happy to report I kept the promise- I love Tucumcari!

This might start a debate, but here’s the fact: Cornerstone First Edition Pizza and Subs has the best pizza in New Mexico. Read on to see why.

A friendly place

When I went to eat at Cornerstone, the first thing I noticed was the brick walls full of signatures. Because Tucucmari gets a constant stream of visitors traveling Route 66, Todd encourages visitors to sign their name on the wall. (I think he might run out of wall soon, but we’ll leave that happy future challenge to him).

 

I love the decor.

 

The second thing you’ll notice is the friendly staff. They seemed genuinely happy to have me in, and as I ordered my pizza, the young man taking my order cracked a good natured joke that had the whole restaurant laughing.

 

 

Then you notice who is eating there. While I was in, a bunch of First Responders were eating along with locals and, if you know anything about the heroes that keep us safe, they don’t like eating bad food.

The Pride is in the Pizza

“Okay, Edward,” you might be thinking right now. “I love the pizza where I live, and yeah, okay, sure, this sounds like a fun, nice place, but really, how can you say it’s the best pizza in New Mexico?”

I love pizza. (Who doesn’t?) I’m originally from Chicago, and Chicago takes pizza seriously, in all its different variations.

 

Look at the crust. Know that it is delicious.

 

I do not like pizza that is: soggy, burnt, tasteless, or generic. (Who does?)

I am serious when I say this: At Cornerstone First Edition, the pizza crust is perfect- PERFECT!

When you bite into it, it is light, flaky and gives way perfectly as you bite down and the flavors of the toppings hit your taste buds. 

The fun decor is in keeping with the rest of Tucucmari: Route 66.

You know how sometimes you have pizza and the crust is like eating a loaf of bread? Not here. It is perfect- and I live in Albuquerque and have tried different pizza places, but none of them have measured up to Cornerstone. I was amazed that a small town had such a killer pizza, and I can’t wait to go back.

Todd and the team take a lot of pride in their pizza- the staff wanted to know I was enjoying it, and as I sat, taking in my surroundings and eating the best thin crust pizza I’ve ever had, I smiled.

 

They are going to run out of places to sign names soon!

Everywhere I go in Tucucmari, people are friendly, welcoming, and are glad you’re there. They want you to love their town as much as they do, and it shows in the interactions I have with people there.

There you have it, New Mexico. I am willing to die on this hill: Cornerstone First Edition Pizza and Subs has the best pizza in New Mexico.
